Herby Lamb Chops

Lamb is a meat with a very delicate flavour, and the thyme and mint compliment this flavour very well in this dish. This recipe works well as an appetizer or a full meal.


0.25 cup extra-virgin olive oil

0.25 fresh mint, finely chopped

3 tsp thyme leaves (the fresher the better)

3 tsp crushed garlic

1 tsp garlic salt

8 lamb rib chops


  1. Mix the olive oil, mint, thyme, garlic, and garlic salt in a large bowl and set aside about 3 tsp of the mixture for later.
  2. Introduce the chops to the bowl and coat them evenly with the marinade, cover the bowl with cling film and place in the refrigerator for half an hour.
  3. Using a cast-iron frying pan, fry the lamb chops over medium heat for about 2 minutes each side (for medium-rare).
  4. Place the chops on 2 plates and allow them to cool.
  5. Sprinkle the rest of the marinade on the chops and serve immediately.
